Leprechaun Crunch is a quick 10 minute snack that kids and adults alike will love.  It’s green colored white chocolate puffcorn that is TO DIE FOR!

Leprechaun Crunch is a new favorite treat in our house because it’s easy to make and my kids are obsessed with it.

So truth be told, I try really hard to be “one of those moms.”

You know, the kind that go overboard on holidays.

Who try to make every holiday special and fun and memorable for my kids.

Sometimes I fail and often it’s tossed together last minute.

But I always try to make every holiday special and fun.

The real question is why.

I firmly believe that you have a short span to really enjoy each holiday with a child.

Before the age of 3, they generally don’t understand or care about the fun traditions.

They go along with them because their parents encourage them, but they don’t truly understand why.

But starting at the age of 3, something magical happens.

They begin to get excited, anticipate events and thoroughly enjoy the little traditions and activities planned for each holiday.

And this magical spark and excitement only lasts for a few short years.

Generally by the time they are 7 or 8 they know the game and that there aren’t really leprechauns or tooth fairies or Santa Clause.

And so my goal is to make those few 4ish years amazing and memorable.

Right now I have a 6 year old and 3 year old.  And it is SO MUCH FUN.

 

 

From March 1 – 17th we have a naughty leprechaun that visits our house and plays tricks on us.

In past years he used to come every few days, but now he comes every day till St. Patrick’s Day and does something naughty.

This year, for the first 8 days so far, he’s done the following:  Colored our milk green, turned our roll dough green & peed green in the toilet.

He switched our bed covers (he put my daughters comforter and pillows and stuffed animals on my sons bed and vice versa.)

He stole all of our shiny gold chocolate coins in the house and wrote in toothpaste on our bathroom mirror.

Then that naughty leprechaun put crepe paper all over the kids bedroom door to block them from getting in.

And today, he switched the cereal into different boxes.

The Lucky Charms was in the Trix box and the Trix in the Lucky Charms Box.

It was quite the naughty “Trix.”

My kids EAT THIS STUFF up.

Every day they wake up and try to figure out what he’s going to do.

And every day they watch closely for him so they can catch him in the act.

But he’s clearly too quick and always gets away with his naughty tricks.

 

 

So it may sound crazy because I’m “one of those mom’s,” but I hope it also makes sense why I do it.

Because they are only little for a few short years.

Their excitement will fade, their anticipation will fade and these little moments will one day be un-cool.

So for now I’ll be the crazy mom who makes the holidays, no matter how small, fun.

And one way to do that is to also make fun snacks that the kids love.

My kids LOVED this Green Leprechaun Crunch.

They love the addition of gold coins and this year, we plan to make a Leprechaun trap to catch that naughty leprechaun.

In an effort to get our gold coins back we thought this treat would be the perfect Leprechaun trap food.

If you’ve got 10 minutes, then whip this up.

It’s perfect for co-workers, kids or teachers and it is SOOOO quick to do.

I should warn you though, this Leprechaun Crunch is addicting.

So beware of who you share it with!

 

Yield: 10 Servings

Leprechaun Crunch

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 9 ounces Puffcorn, butter flavor
  • 24 ounces of Green Candy Melts

Instructions

Pour Puffcorn into a large bowl or roasting pan.
In a smaller glass or metal bowl add green candy melts
Place chocolate bowl on top of a small sauce pan with 1 inch of water.
Turn heat to medium and slowly melt chocolate.
Once chocolate is completely melted, pour over puffcorn.
Stir well.
Spread chocolate puffcorn onto 2 cookie sheets and allow to cool and dry.
Store in an airtight container for up to 4 days.
Serve with chocolate coins for a festive look.
