These German Chocolate Cupcakes are a favorite of ours. These homemade cupcakes are topped with homemade German Chocolate Frosting!  Perfect for birthday’s, weddings and parties!

The other day I came to the website to nab my recipe for German Chocolate Cupcakes and would you believe that it wasn’t here!

I was shocked.

I thought for sure I had posted it and lo and behold I never did.  {Gasp!}

Things like that happen.

I have a stock pile of photos ready for posts but no time to type up the posts.

 

German Chocolate Cupcakes

 

With two small kids around and a busy life as a blogger, time is rare, so I do what I can, when I can.

However, somehow this recipe never quite made it on here.

But alas, I am here to solve that and get it up here so I can find it in the future (without having to gather my notes up) as well as for your sake!

I mean, you are here, and that must mean you too want to try one of these amazing German Chocolate cupcakes!

If you don’t already know the story from one of our other cupcake recipes, I’ll tell it to you the short version here.

 

German Chocolate Cupcakes

 

Over the summer, my daughter did a weekly cupcake and lemonade stand.

Each week we featured a new cupcake flavor and every week it was a surprise as to what flavor it would be.

One week we featured German Chocolate Cupcakes.

YUM!  At the ripe age of 4 she was quite successful in her lemonade and cupcake stand and gained a bit of a following as well as making around a decent chuck of cash.

All of which went into a college fund.

Oh man, were these German Chocolate Cupcakes good.

Not only did we add German Chocolate frosting on top, but we also added some extra to the center of each cupcake.

I mean, the frosting IS what makes the cupcake.

So who doesn’t want a little extra surprise when they bite into it?!

Homemade German Chocolate frosting is to die for.

 

 

German Chocolate Cupcakes

 

Coconut, pecans, and a gooey sauce all combined together make the most amazing flavor combination.

I tried a few frosting recipes before finally deciding this one was my favorite.

It is now our go-to recipe and oh so nummy!

Is there really anything better than moist chocolate cupcakes with German Chocolate frosting?!

I say no.

German Chocolate Cupcakes

German Chocolate Cupcakes - German Chocolate Frosting topping the cupcakes with a chocolate drizzle!

Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • CHOCOLATE CUPCAKES:
  • --------------------------
  • 1 (16 - 18 ounce) box of German Chocolate Cake Mix
  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 3/4 teaspoon salt
  • 1 1/3 cup water
  • 2 Tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 large eggs
  • 1 ounce German chocolate finely chopped (optional)
  • --------------------------
  • GERMAN CHOCOLATE FROSTING:
  • --------------------------
  • 1 cup evaporated milk
  • 1 cup light brown sugar
  • 3 egg yolks
  • 1/4 cup butter (I use salted)
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sweetened flake coconut
  • 1 cup chopped pecans
  • 3 ounces German Chocolate, melted

Instructions

CHOCOLATE CUPCAKES:

Preheat oven to 325*F
Line cupcake pans with cupcake liners.
Using a stand mixer or hand mixer, combine cake mix, flour, sugar and salt. Mix to incorporate.
Add water, oil, vanilla, sour cream and eggs. Mix well until mixture is smooth.
Fold in finely chopped German chocolate
Using a large 3 Tablespoon cookie scoop, fill each liner 3/4 full with cake batter.
Bake for 16 minutes or until toothpick inserted into center comes out clean.
Allow cupcakes to cool completely.
Once cupcakes are cooled, make frosting.

GERMAN CHOCOLATE FROSTING:

In a large sauce pan add evaporated milk, brown sugar, egg yolks, butter and vanilla.
Grab a stool and sit yourself down next to your pot. Bring mixture to a boil and stir constantly until mixture thickens. This should be pretty noticeable and take about 10 minutes or so. (Hence the stool).
Remove pan from heat and add in coconut and pecans. Stir well and set aside, stirring occasionally to help cool mixture down faster.
Once frosting is cooled to room temperature, frost cupcakes. I like to hull out the center of my cupcakes and add a teaspoon inside, but not required.
Top with melted German chocolate drizzle if desired.

How long are the cupcakes good for once filled and frosted? Room temp or refrigeratord?

Hi Jamie! The cupcakes will last longer if covered in the fridge. Covered on the counter, 3 days is about what I'd give it. In the fridge 5-7 days will do. For us, they never last that way.

Yes you can. Follow the directions on your chocolate package for melting directions.

Hi! Quick question: do you think the frosting would be okay in the fridge or freezer for a week?

Yes it should be ok in the fridge or freezer. If it's too thick when thawed, add a tablespoon of milk (or more) until a nice consistency.
