I am sitting here, scratching my head and for the life of me cannot think of what we ate with this Fluffy Buttered Rice the first time I made it. 

I’m drawing a complete blank.  

What I do know is that I was really impressed with how tasty it was.

This Fluffy buttered rice is packed with flavor, cooks up BEAUTIFULLY and is indeed fluffy.

Not sticky or slimy, but a perfectly cooked cloud of rice, if such thing existed.

I liked how easy it was so much that it’s become a staple in our house.  

When we are serving a rice dish, This Fluffy Buttered Rice seems to make an appearance every time and always compliments the dish.

Take this Imperial Chicken for example.  Notice the bed of Fluffy Buttered Rice it’s sitting on?  Notice how delicious it looks?

This Fluffy Buttered Rice added so much to this simple chicken dish because its flavors complimented the main course.

Now if you happen to be one of those people who say you can’t cook rice, then you should skip the cooking and go straight to baking.

This Fluffy Buttered rice isn’t a stove top dish.  It’s baked.

It starts on the stove top and then quickly poured into a casserole dish, covered – IMPORTANT – and then baked.

Why do I say that covered is important.

Experience.

I may have forgotten to cover it a time or two.  And it ALWAYS turns out better covered. 

Uncovered tends to give crispy edges.  But just like when making rice on the stove top, you need to cover it, seal in the moisture and let it do it’s thing.

We are huge rice fans in our house and tend to eat it with a LOT of dishes that we make.  

It’s a simple side dish that is easy to make, looks pretty and tastes great.  It’s also gluten free.  

Which for me is a lifesaver when we’re feeding a gluten free dinner to a friend.  I always fall back on a rice dish or my Crispy Coconut Chicken.

Side note, if you’ve not tried my Crispy Coconut Chicken, then STOP and try it.  SOOO good.  And serve this Fluffy Buttered Rice as a side dish!

Fluffy Buttered Rice

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Yield: 4 Servings

Ingredients

  • 1 cup chicken broth
  • 1 1/4 cup water
  • 1 cup uncooked long grain rice (I love Jasmine rice)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon juice
  • 3 Tablespoons butter

Instructions

  1. Preheat oven to 350*F
  2. Spray a 8x8 casserole dish and set aside.
  3. In a saucepan, bring chicken broth & water to a boil.
  4. Add rice, sugar, salt and lemon juice. Stir well.
  5. Pour into prepared casserole dish.
  6. Cover with foil and bake for 30 minutes.
  7. Remove from oven and stir in butter.
  8. Serve Immediately.
