Corned Beef & Cheese Curd Quesadilla

If you aren’t sure what do make with you left over Corned Beef or are looking for a different way to enjoy corned beef, then try these!

Quesadillas are a delicious treat and can be as simple or as complicated as you want.

This quesadilla is super simple and super delicious.

Delicious as in at midnight, my brother was in the kitchen heating up the stove to make another one because it was so good and he needed a midnight snack.

I used Gossner’s Cheese Factory Cheese Curds from Logan, Utah in this recipe, however any cheese curds will do.

Or if you don’t have fresh cheese curds handy, use your favorite cheddar.

If you are using cheese curds, the key to this is low and slow.

Allowing those curds (or any cheese) to fully melt and wrap their goodness all over the corned beef.

Crunchy on the outside, gooey on the inside deliciousness.

 

Corned Beef & Cheese Curd Quesadilla

Corned Beef & Cheese Curd Quesadilla

Ingredients

  • Thin Slices of Corned Beef
  • Thin Slices of Cheese Curd
  • 2 Tortillas
  • Butter

Instructions

Heat up a pan to medium low heat.
Butter one side of each quesadilla.
Place one buttered side tortilla down in hot pan.
spread cheese and corned beef all over - allowing 1/2 in around edge to remain untouched.
Place top tortilla on, butter side up.
Once bottom tortilla browns and crisps, flip and cook on other side.
When cheese is properly melted and gooey, remove from pan, slice up and consume!

Really good! The saltiness of the cheese curds in this was awesome, really worked well with the corned beef flavor.
