Chicken Pineapple and Bacon Kabobs are such an easy summertime food! Loaded with all things delicious, they’ll quickly be devoured by all your party guests!

There’s just something so perfect about crispy bacon, tender chicken, and sweet pineapple. A match made in heaven? Yeah. Probably!

I love making bacon wrapped chicken kabobs because they use no stove or oven! And in the summer? Forget about that!

I also love these pineapple chicken bacon kabobs because they are quick to whip up. No marinating time but they still taste great!

Chicken kabobs with bacon are also super easy to customize! Which is perfect for picky eaters.

But the best part of chicken bacon kabobs is that my kids love them too! Any meal you know your kids will eat is one that should go on the table!

What is a Chicken Bacon Pineapple Kabob?

A kabob is meat, veggies, or fruit threaded on a skewer and then grilled or roasted.

They are a flavorful summer meals as they are often cooked on a grill or roasted over a fire.

A chicken bacon pineapple kabob is just what the name implies! All 3 ingredients are grilled to perfection.

Though I’ve also included some other yummy foods like bell peppers and onions which compliment the chicken, pineapple, and bacon well.

What Ingredients are in Chicken Pineapple Bacon Kabobs?

Juicy pineapple chunks, strips of bacon, and charred chicken! Let’s break down exactly what you’re gonna need.

  • Skewers: Wooden or metal skewers will work.
  • Bacon: The thick cut bacon will really go well on a kabob.
  • Chicken Breasts: Cut the pieces of chicken into 1 inch cubes for threading on the skewer.
  • Pineapple: Fresh pineapple is preferred but canned pineapple will work in a pinch.
  • Bell Peppers: Any color of bell pepper you prefer.
  • Onion: Again, you choose the color of the onion. Red onion or yellow onion work well.
  • Olive Oil: A light coating of oil will keep the kabobs from sticking. Or sub with vegetable oil.
  • Pineapple Juice: For making the best sticky sweet glaze in the world.
  • Corn Starch: Thickens the pineapple glaze.
  • Brown Sugar: Brown sugar gives the glaze a light molasses flavor.
  • Soy Sauce: Low sodium if you’re worried about the glaze being too salty.

Pro Tips:

  • If you use wooden skewers, place skewers in water for at least 30 minutes as well-soaked skewers burn less.
  • Smaller pieces of pineapple tend to not hold up well so cut to about 1 inch cubes.

How to Grill Chicken Bacon Pineapple Kabobs

First, heat up the grill. 

For some people, those who live your grilling season and have a handle on the grilling process, that’s a no brainer!

But for those of us who always let someone else grill (guilty!) you gotta heat it up first.

Then you’ll take your threaded kabobs that have been brushed with olive oil and cook.

For better results, rotate the skewers being sure to cook each side.

Be sure not to cook them on too high of heat. The chicken and bacon need to cook all the way through, not just be charred on the outside.

Grill over a medium low heat for best results.

I recommend not using marinated chicken! The tangy pineapple glaze can actually break down the meat.

What Kind of Rice Goes with Chicken Bacon Pineapple Kabobs?

Actually you’ve got a lot of options when it comes to what rice to serve with kabobs.

Any plain rice will work, whether white rice or brown rice, it doesn’t matter.

However, the Hawaiian bacon pineapple chicken kebabs have a tropical flavor, so tropical or plain rice will work best.

Two of my favorite rice recipes to serve with Hawaiian chicken kabobs are Buttered Rice and Cilantro Lime Rice.  Both are simple to make and taste great.

Can You Bake Chicken Bacon Pineapple Kabobs?

Absolutely! If you don’t have a grill or it’s cold outside where you live, you can still enjoy these easy kabobs!

Simply take the threaded and greased kabobs and place on a baking sheet lined with aluminum foil.

Then cook in a preheated 450F oven.

It should take 25-30 minutes to bake through completely. Be sure to flip them halfway to prevent burning.

Always check the temperature of the meat to be sure it’s cooked through. 165F means the meat is done and safe to eat.

Depending on the size of your chicken chunks you may need an additional 5-10 minutes.

Can You Make Chicken Bacon Pineapple Kabobs in Advance?

Definitely! I like to make these the morning of a party and pull them out when we’re ready to grill.

Simply thread them up and then cover them tightly and refrigerate until you’re ready to grill them.

If you’re making them in advance, I also recommend making the glaze in advance so you can have both ready to go when you want them.

Store the bacon chicken and pineapple kabobs in the fridge for up to 24 hours before grilling.

If you’ve got no time to make the glaze, try substituting with teriyaki sauce, your favorite barbecue sauce, or even tomato sauce.

Can You Freeze Chicken Bacon Pineapple Kabobs?

This isn’t one I’ve personally done but I believe you could.

Chicken pieces and strips of smoky bacon both freeze well and taste great when thawed.

Pineapple however would become more mushy and might not be the right texture for grilling.

However, if you really need to save the kabobs for a later date, give it a shot and please let us know how it turns out!

Can Dogs Eat Chicken Bacon Pineapple Kabobs?

Many of the ingredients in chicken bacon pineapple kabobs are safe and nutritious for dogs.

That includes the chicken, pineapple, and bell peppers. In small amounts, all of them are healthy and a wonderful treat for your dog.

Since you can create your own skewers, go ahead and whip one up for your dog at the same time.

Bacon can be hard on their systems and onions should always be avoided as they are toxic for dogs.

Also serve their skewer without any pineapple glaze as the sugar is hard for them to process.

Cook Time 20 minutes
Total Time 30 minutes

Instructions

  1. Thread on a skewer bacon, then chicken, pineapple, pepper & onion.
  2. Then repeat on the same skewer until you have 4 pieces of chicken and 3 pieces of pineapple pepper & onion with bacon woven between them.
  3. Repeat with all 6 kabobs.
  4. Brush olive oil onto each kabob covering all sides.
  5. Grill on the grill over medium low heat for 20 minutes or until bacon and chicken are cooked through.
  6. While kabobs are grilling, in a sauce pot combine pineapple juice, corn starch, brown sugar & soy sauce.
    Boil for 2 minutes then set aside.
    Once kabobs are done, generously brush with pineapple glaze & devour!
