One of the best things about soups is that they are fairly easy to make, make ahead, keep warm, etc., and this soup is no exception!

It’s a great option for potlucks and entertaining, but it’s also simple enough to make on a weeknight. 

While this tasty soup isn’t actually made with cheeseburgers and doesn’t even really resemble a cheeseburger, it IS full of all the delicious flavors.  I’m sure you and your family will love this recipe!

What is cheeseburger soup?

Cheeseburger soup, contrary to its name, is not actually made with cheeseburgers! But it’s full of ground beef, cheesy goodness, and tons of delicious flavor.

A tasty combination of vegetables and beef makes up this cheeseburger soup with Velveeta — a meal even your pickiest eaters will love!

What ingredients are in cheeseburger soup?

While you’ve probably never had celery and carrots on your cheeseburger, you’ll find the combination of flavors in this easy cheeseburger soup work perfectly together. 

Here’s what you’ll need for this cheeseburger soup recipe: 

  • Ground beef – I grew up calling ground beef “hamburger.” I didn’t even realize it was called anything else until I was an adult! 
  • Onion – onion is one of the best seasoning vegetables and adds great flavor to this tasty soup! 
  • Carrots – while you wouldn’t normally think of carrots with your burger, they work as another seasoning vegetable in this recipe while adding some great color and nutrients! 
  • Celery – another seasoning vegetable for your soup. 
  • Chicken broth – I prefer chicken broth for this recipe, but you can also sub for vegetable or beef broth. 
  • Basil – basil is a versatile herb that adds a lot of yummy flavor to many different cuisines. I use dried basil for this recipe. 
  • Parsley – parsley adds a bright and somewhat citrusy flavor to any dish. 
  • Potatoes – this delicious and comforting cheeseburger potato soup combines the tastiness of cheeseburgers and fries for a filling dinner anyone will love! 
  • Velveta cheese – Velveeta cheese melts easily, adds a lot of great flavor, and provides a creamy base for your cheeseburger soup. 
  • Milk – I typically prefer to cook with whole milk, but any percentage will work for this recipe. 
  • Salt & Pepper – season to your preferences! 
  • Sour cream – adds richness and flavor to the creamy broth of this soup. 
  • Optional toppings
    • Crumbled bacon – I don’t know about you, but I LOVE bacon on my cheeseburgers, so naturally the idea of bacon cheeseburger soup is VERY appealing!
    • Tabasco sauce – sometimes I like to add a little heat to my soup. 
    • Pickles on the side – the perfect addition to any cheeseburger!

How to make cheeseburger soup?

Once you’ve got your ingredients gathered and prepped, the rest is simple! That’s part of what makes this the BEST cheeseburger soup and just the way I prefer my meals — it’s easy to make. 

  1. Cook ground beef with onion, carrots, and celery. 
  2. Add potatoes, herbs, and broth and simmer. 
  3. Stir in cheese and milk. 
  4. Remove from heat and add sour cream. 
  5. Serve with desired toppings! 

I love the simplicity of a tasty soup on a cool day. The great thing is you can make this earlier in the day and keep it warm in the crockpot until you’re ready to eat!

This is a great meal for taking to potlucks or delivering dinner to a friend or neighbor.

What do I serve with cheeseburger soup?

I especially love soups because they’re a one-pot meal. We usually like to serve this with slices of bread, rolls, or biscuits.

Also, consider serving with toasted, seasoned, and buttered hamburger buns for a fun, on-theme side

Other ideas to serve with cheeseburger soup are fresh fruits, veggies, or salad.

How long does cheeseburgers soup last?

You can store your leftover cheeseburger soup in the fridge for 3-4 days. Store in an airtight container and reheat in the microwave or stovetop. 

If you’re microwaving, cover the bowl or container and heat in 1-2 minute bursts, stirring in between. For stovetop reheating, place in a saucepan over medium heat and cover. Stir occasionally until thoroughly heated. 

Leftovers should be heated to at least 165 degrees for food safety.

Can you freeze cheeseburger soup?

Yes, you can freeze this soup. However, keep in mind that whenever you freeze potatoes (and a lot of other water-full vegetables) they will break down upon thawing.

This will change the texture of the potatoes — they will be grainier and mushier. 

Also be aware that sometimes dairy in soups will separate after freezing and thawing, which will also affect the texture of your food.

Some people aren’t bothered by the changes between frozen and thawed food, but it’s worth being aware of

If you decide to freeze your leftovers, I recommend letting them cool off completely in the fridge, then transferring them to an appropriate-sized freezer bag.

Freeze flat for easier storage: once it’s fully frozen, you can stack or store vertically for space saving and easier reheating!

Can dogs eat cheeseburger soup?

This recipe contains onion, which is harmful to dogs whether it’s cooked, powdered, raw, or fried — so you should not share this soup with your furry friend!

Total Time 30 minutes

Ingredients

  • 1 pound ground beef
  • 3/4 cup yellow onion, diced
  • 3/4 cup carrots, shredded or diced
  • 3/4 cup celery, diced
  • 3 cups chicken broth
  • 1 teaspoon basil, dried
  • 1 teaspoon parsley, dried
  • 4 cups potatoes, peeled & diced
  • 16 ounces Velveta cheese, cubed
  • 1 1/2 cups milk, I prefer cooking with whole, but any % will work!
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup sour cream
  • Crumbled bacon {optional}
  • Tabasco {optional}
  • Pickles, on the side {optional}

Instructions

  1. In a soup pot or dutch oven, cook ground beef, onions, carrots & celery until ground beef is cooked through, onions are translucent and carrots are soft.
  2. If ground beef has a lot of extra fat and oil, drain off.
  3. Add broth, basil, parsley and potatoes to vegetables.
  4. Cover and let simmer for 10 minutes or until potatoes are easy to pierce with a fork.
  5. Stir in Cheese, milk, salt & pepper and bring to a boil. Cook until cheese is melted and well incorporated.
  6. Remove from heat and stir in sour cream, bacon bits, Tobasco, pickles or any other condiments.
  7. Serve immediately.

I love cheeseburger soup! A restaurant near where I grew up served it on special days and I was always excited to see it on the menu. I have long looked for a replica of their recipe, and yours is spot on! So dang delicious!
