How many of you feel like your lives are being pulled in a million directions? My life generally involves working, laundry, cleaning, yard work, kids, kids activities, your activities, church, family and a variety of other tasks that must be accomplished every day or on a regular basis. 

Sound familiar?  Good, then I’m not alone.

My goal every day is to end the say with my sanity still in tact and some how make sure my kids are eating well enough so that their teeth don’t fall out.

On top of all of the above, I enjoy entertaining. I love having people over for dinner or girls nights or just to catch up.  I’m a very social person and love learning from others! 

My oldest starts kindergarten this year. {GASP!} How many of you are right there with me?! 

Now my mind is thinking ahead to packed lunches and classroom snacks as well as after school snacks and a dinner that will help provide strength and energy to tackle another day in the classroom. 

 

BBQ Chicken & Mozzarella Pockets

 

A favorite childhood memory was coming home and the snacks my mom would provide. 

My mother was an in home day care provider.  And her afternoon snacks were ALWAYS looked forward to. 

My mother could bake and bake well and we always enjoyed what ever she whipped up for the day.

I want to provide my daughter that same type of memory.  A special snack for when she comes home from school.  So I was thinking I needed a snack that wasn’t going to fill her up and spoil her dinner, but something hearty enough to satisfy her hunger after school.  And I don’t know anyone who doesn’t love BBQ chicken!

I needed a snack that was portable in the car which she could eat on the way home {or to an activity} and one that would be quick to toss together.

That’s when I created this easy and tasty BBQ chicken & mozzarella pocket snack.  Not only does it make a great and healthy snack choice for after school, between soccer practice or on the go, it also makes a great appetizer for your next party. I like to serve my BBQ chicken & mozzarella pockets with green grapes, a favorite fruit in our house!

Simple, delicious and easy.  My three favorite words!

Yield: 16 Servings for Snacks or Appetizers

BBQ Chicken & Mozzarella Pocket

BBQ Chicken & Mozzarella Pocket

Ingredients

  • 1 (17 ounce) box of Farm Rich Barbecue Boneless Chicken Bites
  • 1 (24 ounce) box of Farm Rich breaded mozzarella sticks
  • 2 cloves garlic, minced
  • 2 cans of refrigerated crescent rolls
  • 8 Tablespoons of Ranch
  • 4 Tablespoons of Barbecue sauce (your favorite kind)

Instructions

Preheat oven to 425*F
Open chicken box and set included barbecue packet aside for use later. Place 1/2 of chicken on a baking tray. Put the remaining chicken back in freezer.
Open mozzarella sticks and place 5 sticks on the same tray as chicken. Place remaining sticks back in freezer.
Cook chicken & mozzarella for 10 minutes. Remove from oven. Flip chicken over and take mozzarella sticks off tray. Place chicken back into oven and cook for 7 more minutes.
Once chicken is done, remove and place on cutting board.
Lower oven temp to 350*F
Cut chicken and mozzarella into bite sized pieces. Place in a bowl.
Add reserved barbecue sauce packet & minced garlic to chicken & mozzarella bites, coating well.
Open up refrigerated crescent rolls. Roll out the sheet of dough and squish diagonal cuts back together so you have 4 rectangles. These will be your 4 pockets.
Place 1/4 cup of chicken mixture on one side of each crescent roll.
Fold crescent dough over on top of chicken mixture and seal up sides by pressing dough together with fingers.
Place back onto baking dish and bake for 11 minutes.
While pockets are in oven baking, create your dipping sauce. In a small bowl add 8 Tablespoons of ranch and 4 Tablespoons of barbecue sauce together.
When timer goes off, remove from oven and cut in half.
Serve immediately.
